If your VPN provider supplies a good Linux VPN software "client" application, then you can add that to your startup applications and in those Linux VPN clients, there is usually an option to automatically connect to the last VPN server used or the fastest server, etc. If you want to connect to a particular VPN provider's server that is already in your Network Manager (NM), just click to edit your ISP (Internet Service Provider) connection, click the General Tab, and you will see the VPN options, check automatically connect to VPN, and pick the VPN server, Apply, ok.
